Ingredients
  

Vegetables
  • 2 cups broccoli florets
  • 1 cup uncooked rice
Broth & Dairy
  • 2 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 cup cream of mushroom soup
  • 1/2 cup milk
Spices & Seasonings
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
Topping (Optional)
  • 1/2 cup breadcrumbs for added crunch

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook rice in vegetable broth until tender, about 15 minutes.
  3. Steam broccoli until tender, 5-7 minutes.
  4. Mix cooked rice, broccoli, cheese, soup, milk, spices, salt, and pepper. Transfer to a greased dish.
  5. If desired, sprinkle breadcrumbs on top and bake for 25-30 minutes until bubbly and golden.

Notes

For extra flavor, add a pinch of paprika or hot sauce.
