Ingredients
  

Vegetables
  • 1 head Cauliflower cut into florets
  • 1 cup Shredded Cheddar Cheese preferably sharp
  • 0.5 cup Cream Cheese softened
  • 2 cloves Garlic minced
  • 1 tablespoon Olive Oil
  • to taste Salt and Pepper for seasoning

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Steam or boil cauliflower until tender, then drain.
  3. In a bowl, mix cauliflower, cream cheese, cheddar, garlic, olive oil, salt, and pepper.
  4. Transfer mixture to a baking dish and bake for 20-25 minutes until bubbly and golden.
  5. Let cool slightly before serving or freezing for later.

Notes

This casserole is perfect for meal prep and can be frozen for quick, low-carb meals.
