  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 1 tablespoon fresh parsley, chopped

Method
 

  1. Cook ground beef in olive oil until browned, then add onion and garlic; cook until softened.
  2. Add potatoes and seasonings; stir well.
  3. Pour in beef broth, cover, and simmer until potatoes are tender, about 20-25 minutes.
  4. Sprinkle cheese over the mixture, cover, and cook until melted, 2-3 minutes.
  5. Garnish with chopped parsley before serving.

Notes

For a creamier texture, add a splash of milk or cream before serving.
