  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 10.5 oz cream of mushroom soup (or cream of chicken)
  • 0.5 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • chopped parsley for garnish Optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Brown beef and diced onion in a skillet. Drain excess fat.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Whisk together soup, milk/broth, paprika, salt, and pepper in a bowl.
  5. Combine rice, beef mixture, half the cheese, and sauce in the baking dish. Mix well.
  6. Sprinkle remaining cheese on top. Cover with foil and bake for 20 minutes.
  7. Remove foil and bake for 10 minutes until cheese is bubbly.
  8. Broil for 2 minutes for a crispy cheese topping (optional).
  9. Garnish with parsley and serve hot.

Notes

For a richer flavor, use beef broth instead of milk. You can also add other vegetables like bell peppers or mushrooms to the beef mixture.
