Meat and Rice
  • 1 lb ground beef
  • 1 cup long-grain rice, uncooked
Vegetables and Seasonings
  • 1 onion onion, chopped
  • 1 clove garlic, minced
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
Dairy and Broth
  • 2 cups beef broth
  • 1 can (10.75 oz) cream of mushroom soup
  • 1 cup cheddar cheese, shredded
Garnish
  • 0.25 cup fresh parsley, chopped for garnish

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Cook ground beef, onion, and garlic until browned; drain excess fat.
  3. Stir in rice, beef broth, mushroom soup, salt, pepper, and paprika; bring to a boil, then simmer 5 minutes.
  4. Transfer to baking dish, cover, and bake 25 minutes. Remove foil, top with cheese, and bake 10-15 minutes until melted.
  5. Garnish with chopped parsley before serving.

Notes

For a creamier texture, let the casserole rest for a few minutes before serving.
