Ingredients
  

Meat and Vegetables
  • 1 lb ground beef
  • 1 onion onion, chopped
  • 1 garlic clove garlic, minced
Grains and Liquids
  • 1 cup long-grain rice, uncooked
  • 2 cups beef broth
  • 1 (10.75 oz) can cream of mushroom soup
Cheese and Seasonings
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup fresh parsley, chopped for garnish

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Cook ground beef, onion, and garlic until browned; drain excess fat.
  3. Mix in rice, beef broth, and mushroom soup; season with salt, pepper, and paprika. Bring to boil, then simmer 5 minutes.
  4. Transfer to baking dish, cover, and bake 25 minutes. Remove foil, top with cheese, and bake uncovered 10-15 minutes until melted.
  5. Garnish with chopped parsley before serving.

Notes

For a creamier texture, let the casserole rest for 5 minutes before serving.
