Ingredients
  

Eggs and Binders
  • 4 large eggs (or chickpea flour + water)
  • 1 cup plain Greek yogurt
  • 1 egg egg (or flax egg)
  • ¼ cup milk
Vegetables and Protein
  • ½ cup finely chopped veggies (spinach, peppers, zucchini, broccoli)
  • 1 cup cooked chicken breast, shredded
  • 1 small zucchini, diced
  • 1 can (14 oz) crushed tomatoes
  • ½ cup red lentils (optional)
Dairy & Cheese
  • ½ cup shredded cheese
  • 1 cup shredded cheddar cheese
Carbohydrates & Grains
  • 1 cup whole grain pasta (elbows, shells, or penne)
  • 2 cups cooked macaroni
Breadcrumbs & Oats
  • ½ cup breadcrumbs (or crushed oats)
  • ¼ cup rolled oats
Seasonings & Extras

Method
 

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  2. Whisk eggs (or chickpea flour mix), stir in cheese and veggies, then pour into muffin cups. Bake 15–18 mins.
  3. Cook pasta; sauté veggies, then combine with cooked chicken, tomato sauce, and lentils. Toss with pasta and serve.
  4. Layer yogurt, berries, and granola in cups; drizzle with honey if desired.
  5. Assemble tortillas with cheese, beans/chicken, veggies; cook on skillet until crispy. Cool and cut into wedges.
  6. Mix oats, milk, apples, cinnamon, and chia seeds; refrigerate overnight. Serve cold or warmed.
