  • 1 lb ground beef
  • 4 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

  1. Brown ground beef in olive oil. Drain excess fat.
  2. Add onion and garlic; cook until softened.
  3. Stir in potatoes, thyme, paprika, salt, and pepper. Cook briefly.
  4. Pour in beef broth and heavy cream. Simmer.
  5. Cover and cook until potatoes are tender.
  6. Stir in cheddar cheese until melted and creamy.
  7. Adjust seasoning.
  8. Serve hot, garnished with parsley.

Notes

For a spicier dish, add a pinch of red pepper flakes along with the paprika.
