Method
- Brown ground beef in olive oil. Drain excess fat.
- Add onion and garlic; cook until softened.
- Stir in potatoes, thyme, paprika, salt, and pepper. Cook briefly.
- Pour in beef broth and heavy cream. Simmer.
- Cover and cook until potatoes are tender.
- Stir in cheddar cheese until melted and creamy.
- Adjust seasoning.
- Serve hot, garnished with parsley.
Notes
For a spicier dish, add a pinch of red pepper flakes along with the paprika.
