- Preheat oven to 400°F (200°C). Wash and cut baby potatoes into halves or quarters. Slice smoked sausage into 1/4-inch thick rounds.
- Mix ranch seasoning, garlic powder, onion powder, and black pepper in a bowl. Toss potatoes with olive oil and half the seasoning mix until evenly coated.
- Line a baking sheet with parchment paper. Spread seasoned potatoes in a single layer, then scatter smoked sausage pieces over them.
- Roastr in the oven for 35-40 minutes, stirring halfway, until potatoes are golden and tender.
- Sprinkle shredded cheese over the potatoes and sausage. Return to oven for 5 minutes until cheese is melted and bubbly.
- Garnish with chopped parsley and serve hot with a dollop of sour cream if desired.
Notes
For a spicy twist, add diced jalapeños or red pepper flakes to the seasoning mix.
