Ingredients
  

Main Ingredients
  • 2 cups cooked white rice
  • 1 pound Italian beef sausage mild or spicy
  • 1 medium onion diced
  • 1 bell pepper bell pepper diced, any color
  • 2 cloves garlic minced
  • 1 can (14.5 ounces) diced tomatoes undrained
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper Salt and pepper
  • 2 tablespoons olive oil
  • optional Fresh parsley chopped parsley for garnish

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook onion and bell pepper in olive oil until softened, then add garlic and cook 1 minute.
  3. Add sausage, cook until browned, then stir in tomatoes, rice, seasoning, salt, and pepper.
  4. Mix in half the cheeses, transfer to a baking dish, top with remaining cheese, and bake 20-25 minutes until bubbly.
  5. Let cool briefly, garnish with parsley if desired, then serve.

Notes

For extra flavor, add a pinch of red pepper flakes or your favorite herbs.
