Ingredients
  

Grains
  • 1 cup quinoa
  • 2 cups vegetable broth
Vegetables
  • 1 cup broccoli florets
  • 1 cup diced bell peppers
  • 1 cup diced zucchini
Cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
Seasonings & Oils
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste Salt and pepper
  • 1 tablespoon olive oil
  • 1/2 cup bread crumbs (optional)

Method
 

  1. Cook quinoa in vegetable broth until absorbed, about 15 minutes.
  2. Mix cooked quinoa with vegetables, cheeses, seasonings, and olive oil.
  3. Transfer to a greased baking dish, sprinkle bread crumbs if using, and drizzle with olive oil.
  4. Bake at 375°F (190°C) for 25-30 minutes until golden and heated through.
  5. Let cool slightly, then serve warm.

Notes

You can add more vegetables or adjust cheese types for variation.
