Ingredients
  

Dough
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
Dry ingredients
  • 2 1/4 cups all-purpose flour
  • 1 1/2 tsp cream of tartar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
Topping
  • 2 tbsp granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  2. Cream butter, sugars, then beat in eggs and vanilla.
  3. Mix dry ingredients and combine with wet until just blended.
  4. Spread dough in pan, sprinkle cinnamon-sugar topping, then bake 20–25 minutes.
  5. Cool, lift out, and cut into squares.

Notes

For extra chewiness, slightly underbake and let cool in the pan.
