Method
- Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
- Cream butter, sugars, then beat in eggs and vanilla.
- Mix dry ingredients and combine with wet until just blended.
- Spread dough in pan, sprinkle cinnamon-sugar topping, then bake 20–25 minutes.
- Cool, lift out, and cut into squares.
Notes
For extra chewiness, slightly underbake and let cool in the pan.
