Ingredients

  • 2 pieces boneless, skinless chicken breasts
Vegetables
  • 2 cups fresh spinach
Dairy
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
Other ingredients
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 1 teaspoon italian seasoning
  • 1 tablespoon lemon juice

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt, pepper, and Italian seasoning; cook in skillet with olive oil until golden, then set aside.
  3. Sauté garlic, add spinach until wilted, then stir in cream and Parmesan until melted. Add lemon juice.
  4. Return chicken to skillet, spoon sauce over, then bake in oven for 15 minutes.

Notes

Use fresh spinach for best flavor and texture.
