Ingredients
  

Noodles
  • 2 packages ramen noodles seasoning packets discarded
  • 1 lb boneless chicken thighs cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 red bell pepper red bell pepper sliced
  • 1 cup snap peas
  • 1 carrot carrot julienned
  • 3 cloves garlic minced
  • 1 tbsp ginger minced
  • 3 green onions green onions sliced, white and green parts separated
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/4 tsp white pepper

Method
 

  1. Boil water and cook ramen noodles for 2 minutes, then drain.
  2. Mix soy sauce, oyster sauce, sesame oil, sugar, and white pepper to make the sauce.
  3. Stir-fry chicken in 1 tbsp oil until cooked, then set aside.
  4. Stir-fry vegetables in remaining oil for 2-3 minutes, add garlic, ginger, and white parts of green onions, cook 30 seconds.
  5. Add chicken, noodles, and sauce to the pan, stir-fry 2-3 minutes, then garnish with green parts of onions and serve.

Notes

Use fresh vegetables for best flavor and texture.
