Method
- Heat olive oil in a large oven-safe skillet over medium heat.
- Add chicken and cook until browned on all sides. Remove chicken and set aside.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Add rice, chicken broth, turmeric, salt, and pepper to the skillet and bring to a boil.
- Return chicken to the skillet. Cover and transfer to a preheated oven at 375°F (190°C).
- Bake for 25-30 minutes, or until rice is cooked through and liquid is absorbed.
- Remove from oven and let rest for 5 minutes.
- Garnish with cilantro and serve with lime wedges, if desired.
Notes
For extra flavor, toast the rice in the skillet for a few minutes before adding the chicken broth.
