  • 1 lb boneless, skinless chicken thighs cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup long-grain rice rinsed
  • 2 cups chicken broth
  • 1 tsp turmeric powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup chopped cilantro for garnish (optional)
  • 1 lime cut into wedges, for serving (optional)

Method
 

  1. Heat olive oil in a large oven-safe skillet over medium heat.
  2. Add chicken and cook until browned on all sides. Remove chicken and set aside.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Add rice, chicken broth, turmeric, salt, and pepper to the skillet and bring to a boil.
  5. Return chicken to the skillet. Cover and transfer to a preheated oven at 375°F (190°C).
  6. Bake for 25-30 minutes, or until rice is cooked through and liquid is absorbed.
  7. Remove from oven and let rest for 5 minutes.
  8. Garnish with cilantro and serve with lime wedges, if desired.

Notes

For extra flavor, toast the rice in the skillet for a few minutes before adding the chicken broth.
