Ingredients
  

Meat
  • 1 lb chicken beef sausage, sliced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 medium onion, chopped
  • 1 bell pepper chopped
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup corn (fresh or frozen)
  • 2 green onions chopped (for garnish)

Method
 

  1. Cook sausage in a large skillet until browned, then set aside.
  2. Sauté onion, bell pepper, and garlic until softened.
  3. Add rice and toast for 1-2 minutes, then stir in broth, BBQ sauce, and spices. Bring to boil.
  4. Reduce heat, cover, and simmer for 15 minutes. Stir in corn and sausage, cook 5 more minutes.
  5. Garnish with green onions and serve.

Notes

Use fresh or frozen corn for best flavor.
