  • 2 eggs
  • 1/2 cup cooked chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • to taste Salt and pepper
  • Optional Chopped fresh parsley or cilantro for garnish

Method
 

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add chickpeas and sprinkle with cumin, paprika, salt, and pepper. Cook for 3-5 minutes, stirring occasionally.
  3. Carefully crack the eggs into the skillet alongside the chickpeas.
  4. Cook the eggs to your desired doneness.
  5. Season the eggs with salt and pepper.
  6. Serve immediately, garnished with fresh parsley or cilantro if desired.

Notes

For a spicier kick, add a pinch of red pepper flakes along with the cumin and paprika.
