Ingredients
  

Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
Wet ingredients
  • 3 ripe bananas mashed bananas about 1 1/2 cups mashed
  • 1/3 cup vegetable oil
  • 2 large eggs eggs
  • 1 teaspoon vanilla extract
Add-ins
  • 1/2 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine dry ingredients: flour, sugar, and baking soda.
  3. In another bowl, mix mashed bananas, oil, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Fold in chocolate chips.
  5. Divide batter evenly among muffin cups and bake for 20 minutes or until a toothpick comes out clean.
  6. Allow muffins to cool before serving. Enjoy!

Notes

For extra flavor, sprinkle some chopped nuts on top before baking.
