  • 3 ripe bananas ripe bananas mashed
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 2 eggs large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
Swirl
  • 1/4 cup brown sugar
  • 1 tablespoon cinnamon

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix mashed bananas, sugar, melted butter, and eggs until well combined.
  3. Stir in flour, baking soda, and cinnamon until just combined.
  4. Pour half of the batter into the pan, sprinkle with brown sugar and cinnamon, then add remaining batter.
  5. Swirl the cinnamon sugar mixture into the batter with a knife. Bake for 60 minutes or until a toothpick comes out clean.

Notes

For extra flavor, add chopped nuts or a glaze on top.
