Ingredients
  

Dry ingredients
  • 1 1/2 cups gluten-free flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
Wet ingredients
  • 3 ripe bananas mashed bananas about 1 1/2 cups mashed
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
Cinnamon Swirl
  • 2 tablespoons cinnamon
  • 2 tablespoons brown sugar

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix dry ingredients in a bowl. In another, mash bananas and add wet ingredients.
  3. Combine wet and dry ingredients until just mixed. Swirl cinnamon and brown sugar into the batter.
  4. Pour batter into the prepared loaf pan. Swirl cinnamon mixture on top.
  5. Bake for 50 minutes or until a toothpick inserted comes out clean. Cool before slicing.

Notes

Use ripe bananas for best flavor and sweetness.
