Ingredients
  

Pasta
  • 400 grams spaghetti
  • 150 grams pancetta diced
  • 3 large eggs beaten
  • 50 grams Parmesan cheese grated
  • 1 tsp black pepper freshly ground
  • 1 tbsp olive oil

Method
 

  1. Cook spaghetti in boiling salted water until al dente, then drain.
  2. In a pan, heat olive oil and cook pancetta until crispy.
  3. In a bowl, beat eggs and mix with grated Parmesan and pepper.
  4. Combine hot pasta with pancetta, then remove from heat and quickly mix in egg mixture.
  5. Serve immediately with extra cheese and pepper if desired.

Notes

Use fresh eggs for best flavor and texture.
