Method
- Place chicken breasts in the bottom of a slow cooker.
- Add black beans, corn, diced tomatoes, green chilies, chicken broth, chili powder, cumin, and garlic powder.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
- Shred the chicken with two forks directly in the slow cooker.
- Stir to combine the shredded chicken with the other ingredients.
- Serve hot with your favorite toppings.
Notes
For a spicier dish, add more chili powder or a pinch of cayenne pepper.
