  • 1.5 lbs boneless, skinless chicken breasts
  • 15 ounce black beans, rinsed and drained canned
  • 15 ounce corn, drained canned
  • 10 ounce diced tomatoes and green chilies like Rotel, undrained
  • 1 cup chicken broth
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • 0.25 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Place chicken breasts in the bottom of a slow cooker.
  2. Add black beans, corn, diced tomatoes, green chilies, chicken broth, chili powder, cumin, and garlic powder.
  3. Season with salt and pepper.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
  5. Shred the chicken with two forks directly in the slow cooker.
  6. Stir to combine the shredded chicken with the other ingredients.
  7. Serve hot with your favorite toppings.

Notes

For a spicier dish, add more chili powder or a pinch of cayenne pepper.
