Coffee Cake Banana Bread Muffins

Ingredients
  

Bananas
  • 3 pieces ripe bananas (mashed) the riper the banana, the sweeter and more flavorful your muffins will be.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • pinch salt
  • 1 cup sugar
  • 1 pieces egg (beaten)
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ cup brown sugar
  • cup flour
  • 2 tablespoons melted butter
  • 1 teaspoon ground cinnamon

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix mashed bananas, melted butter, egg, vanilla, sugar, flour, baking soda, and cinnamon until combined.
  3. Fill muffin cups about ¾ full with batter.
  4. Combine brown sugar, flour, cinnamon, and melted butter to make streusel; sprinkle on top of muffins.
  5. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.

Notes

For extra flavor, add chopped nuts or chocolate chips to the batter.
