Ingredients
  

Grains and Broth
  • 1 cup brown rice
  • 2 cups vegetable broth
Vegetables
  • 2 cups broccoli florets
Sauce
  • 1 cup soaked cashews
  • 1/4 cup nutritional yeast
  • 1 lemon lemon (juiced)
Additional
  • to taste Salt and pepper

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook rice in vegetable broth until tender, about 35 minutes.
  3. Steam broccoli until just tender, about 5 minutes.
  4. Blend cashews, nutritional yeast, lemon juice, and salt until smooth.
  5. Mix cooked rice, broccoli, and cashew sauce; transfer to a greased dish and bake for 25 minutes.
  6. Optional: sprinkle gluten-free breadcrumbs on top before baking.
