Ingredients
  

Salad Ingredients
  • 2 cups fresh sweet corn kernels about 3 medium ears
  • 1 cup red bell pepper diced
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
Dressing
  • 2 tablespoons lime juice freshly squeezed
  • 2 tablespoons extra virgin olive oil
  • to taste Salt and pepper

Method
 

  1. Cut corn kernels off the cob.
  2. Dice bell pepper and cucumber. Chop red onion and cilantro.
  3. Combine corn, bell pepper, cucumber, red onion, and cilantro in a bowl.
  4. Whisk lime juice, olive oil, salt, and pepper in a small bowl.
  5. Pour dressing over vegetables and toss.
  6. Refrigerate for 30 minutes. Serve chilled.

Notes

For a spicier kick, add a pinch of cayenne pepper to the dressing.
