Method
- Cut corn kernels off the cob.
- Dice bell pepper and cucumber. Chop red onion and cilantro.
- Combine corn, bell pepper, cucumber, red onion, and cilantro in a bowl.
- Whisk lime juice, olive oil, salt, and pepper in a small bowl.
- Pour dressing over vegetables and toss.
- Refrigerate for 30 minutes. Serve chilled.
Notes
For a spicier kick, add a pinch of cayenne pepper to the dressing.
