  • 1 tablespoon honey or maple syrup optional for sweet version

  • Pinch salt

Method
 

  1. Whisk eggs and cottage cheese until smooth. Add dry ingredients and sweetener, then stir to form a thick batter. Let sit for 1-2 minutes.
  2. Heat a greased skillet over medium heat. Scoop batter and cook for 2-3 minutes until edges set, then flip and cook another 1-2 minutes.
  3. Serve warm with toppings like berries, yogurt, or syrup.

Use full-fat cottage cheese for best texture and flavor.
