Ingredients
  

Chicken
  • 2 pieces boneless, skinless chicken breasts, cubed
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper (optional)
  • to taste Salt and black pepper
  • 8 oz linguine
  • Salted water for boiling
  • ¼ cup reserved pasta water
  • ½ cup unsalted butter, softened
  • 2 cloves garlic, minced
  • ¼ cup chicken broth
  • ¼ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • ½ tsp crushed red pepper flakes (optional)

Method
 

  1. Cook the linguine in salted boiling water until al dente.
  2. Season and sear the chicken until cooked through.
  3. Make the cowboy butter sauce by combining butter, garlic, broth, cream, Parmesan, mustard, lemon, and red pepper flakes.
  4. Combine pasta, chicken, and sauce; toss to coat.
  5. Finish with parsley and serve hot.

Notes

For extra flavor, sprinkle with additional Parmesan or red pepper flakes.
