  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 15 ounce kidney beans, rinsed and drained
  • 15 ounce pinto beans, rinsed and drained
  • 15 ounce corn, drained
  • 14.5 ounce diced tomatoes, undrained
  • 10 ounce diced tomatoes and green chilies, undrained
  • 4 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon oregano
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, green onions

Method
 

  1. Brown ground beef in a pot, drain grease.
  2. Add onion and bell pepper, cook until softened (5 min).
  3. Stir in garlic, cook 1 minute.
  4. Add beans, corn, tomatoes, broth, chili powder, cumin, oregano, salt, and pepper.
  5. Bring to a boil, then simmer for 30-60 minutes, stirring occasionally.
  6. Taste and adjust seasonings.
  7. Serve hot with toppings.

Notes

For a spicier soup, add a pinch of cayenne pepper or a dash of hot sauce.
