  • 4 pieces bone-in, skin-on chicken thighs
  • 2 cups Brussels sprouts, halved
  • 2 medium sweet potatoes, diced
  • 1 red onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 1 cup chicken broth
  • for garnish Fresh parsley

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss vegetables with olive oil, thyme, garlic powder, salt, and pepper; spread on a baking sheet.
  3. Season chicken thighs with salt and pepper; place on vegetables and pour broth around.
  4. Bake for 35-40 minutes until cooked and tender.
