Dried Cranberries
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Mix softened butter, sugars, egg, and vanilla until smooth.
  2. Combine oats, flour, baking soda, cinnamon, and salt in a separate bowl.
  3. Gradually add dry ingredients to wet, mixing until just combined. Fold in cranberries.
  4. Drop spoonfuls onto a parchment-lined baking sheet, spacing 2 inches apart.
  5. Bake for 10-12 minutes until edges are golden. Cool on wire rack.

Notes

For chewier cookies, refrigerate the dough for 30 minutes before baking.
