Method
- Preheat oven to 350°F (175°C). Mix softened butter, sugars, egg, and vanilla until smooth.
- Combine oats, flour, baking soda, cinnamon, and salt in a separate bowl.
- Gradually add dry ingredients to wet, mixing until just combined. Fold in cranberries.
- Drop spoonfuls onto a parchment-lined baking sheet, spacing 2 inches apart.
- Bake for 10-12 minutes until edges are golden. Cool on wire rack.
