- Preheat oven to 350°F (175°C).
- Pat turkey dry, season with salt and pepper. Sear skin-side down in a skillet with olive oil until golden, then flip and sear other side.
- Simmer cranberries, orange juice, brown sugar, orange zest, cinnamon, ginger, and mustard until thickened, 10-15 minutes.
- Pour glaze over turkey, transfer to oven, and roast until internal temp reaches 165°F (75°C), about 1.5-2 hours, basting every 30 minutes.
- Rest turkey 15-20 minutes, garnish with parsley, and serve with remaining glaze.
