Ingredients
  

Meat
  • 1 pound breakfast sausage
  • 1 cup fresh or dried cranberries
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 package (12 oz) stuffing mix
  • 4 cups chicken broth
  • 6 large eggs
  • 1 cup milk
  • to taste Salt and pepper
  • optional Fresh parsley for garnish

Method
 

  1. Preheat oven to 350°F (175°C). Cook sausage until browned; drain.
  2. Add onion and celery; cook until softened. Stir in cranberries, thyme, and sage.
  3. Combine stuffing mix with sausage mixture; add chicken broth and sit for 10 minutes.
  4. Whisk eggs, milk, salt, and pepper; pour over stuffing and fold gently.
  5. Transfer to a greased baking dish; cover and bake 30 minutes, then uncover and bake 15-20 minutes until golden.

Notes

This casserole can be assembled ahead of time and baked just before serving for a stress-free holiday brunch.
