- Preheat the oven to 325 degrees F. Grease a 9-by-5 inch loaf pan with nonstick spray.
- Prepare the cream cheese mixture by combining cream cheese, sugar, flour, egg, and vanilla. Beat until smooth and set aside.
- Whisk together flour, baking soda, salt, cinnamon, nutmeg, and pumpkin pie spice. Set aside.
- Beat together vegetable oil, sugar, eggs, and pumpkin puree until well combined.
- Pour half the batter into the loaf pan, layer with cream cheese mixture, then add the remaining batter. Bake for 85-95 minutes or until a toothpick comes out clean.
Notes
Cool in pan for 15 minutes before removing, then place on a wire rack and cool completely before slicing.
