  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces fettuccine pasta
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice

Method
 

  1. Season chicken with Cajun spices. Cook in hot oil until golden and cooked through.
  2. Melt butter, sauté garlic, then add cream and broth, simmer to thicken.
  3. Stir in Parmesan, cook pasta, then combine with sauce and sliced chicken. Add parsley and lemon juice.

Notes

For extra flavor, sprinkle with additional parsley or Parmesan before serving.
