Ingredients
  

Pasta
  • 8 oz fettuccine pasta
Chicken
  • 1 lb boneless, skinless chicken breasts
Seasonings
  • 2 tablespoons cajun seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
Sauce
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley
Salt and Pepper
  • salt and pepper to taste

Method
 

  1. Cook pasta until al dente, then drain.
  2. Season chicken with Cajun seasoning, salt, and pepper, then cook in a skillet until golden and cooked through. Rest and slice.
  3. Sauté garlic in the same skillet, then add heavy cream and Parmesan, simmer until thickened.
  4. Add cherry tomatoes, cook briefly, then toss with pasta and sliced chicken. Garnish with parsley.

Notes

For extra spice, add more Cajun seasoning or red pepper flakes.
