Method
- Preheat oven to 375°F (190°C). Steam cauliflower until tender.
- In a saucepan, melt butter, whisk in flour, then add milk, salt, and pepper to make a béchamel sauce.
- Mix cauliflower with sauce and half of the cheese, then transfer to a baking dish.
- Top with remaining cheese and bake for 20-25 minutes until bubbly and golden.
- Let cool slightly before serving.

Use low-fat cheese and milk for a healthier version.
