  • 1 pound gnocchi
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 5 ounces baby spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup crumbled feta cheese
  • to taste Salt and pepper

Method
 

  1. Cook gnocchi according to package directions.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add garlic and cook for 1 minute, or until fragrant.
  4. Add spinach and cook until wilted, about 2-3 minutes.
  5. Stir in heavy cream and Parmesan cheese.
  6. Season with salt and pepper to taste.
  7. Drain gnocchi and add it to the skillet with the sauce.
  8. Toss to coat.
  9. Serve immediately, topped with crumbled feta cheese.

Notes

For a lighter version, use half-and-half instead of heavy cream.
