Method
- Preheat oven to 375°F (190°C).
- Steam or boil cauliflower until tender, about 8-10 minutes. Drain well.
- Melt butter in a skillet over medium heat. Add garlic and cook for 1 minute.
- Add cream cheese and heavy cream to the skillet. Whisk until smooth.
- Stir in Parmesan cheese and nutmeg. Season with salt and pepper.
- Add chicken and cauliflower to the Alfredo sauce. Stir to combine.
- Pour the mixture into a greased 9x13 inch baking dish.
- Sprinkle mozzarella cheese on top (optional).
- Bake for 20-25 minutes, or until bubbly and browned.
- Let cool slightly before serving.
Notes
For a richer flavor, use freshly grated Parmesan cheese. You can also add other vegetables like broccoli or spinach to the casserole.
