  • 1.5 lbs boneless, skinless chicken breasts cooked and shredded
  • 1 head cauliflower cut into florets
  • 4 oz cream cheese softened
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup butter
  • 2 cloves garlic minced
  • 0.25 teaspoon nutmeg
  • to taste Salt and pepper
  • 0.25 cup shredded mozzarella cheese optional, for topping

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Steam or boil cauliflower until tender, about 8-10 minutes. Drain well.
  3. Melt butter in a skillet over medium heat. Add garlic and cook for 1 minute.
  4. Add cream cheese and heavy cream to the skillet. Whisk until smooth.
  5. Stir in Parmesan cheese and nutmeg. Season with salt and pepper.
  6. Add chicken and cauliflower to the Alfredo sauce. Stir to combine.
  7. Pour the mixture into a greased 9x13 inch baking dish.
  8. Sprinkle mozzarella cheese on top (optional).
  9. Bake for 20-25 minutes, or until bubbly and browned.
  10. Let cool slightly before serving.

Notes

For a richer flavor, use freshly grated Parmesan cheese. You can also add other vegetables like broccoli or spinach to the casserole.
