Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup mushrooms, sliced
  • 1 piece onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
Mashed Potatoes
  • 4 large potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup milk

Method
 

  1. Heat olive oil in a skillet and cook seasoned chicken until browned, then set aside.
  2. Sauté onion and mushrooms until tender, then add garlic and thyme, cooking briefly.
  3. Pour in chicken broth and heavy cream, simmer, then return chicken to heat through.
  4. Boil potatoes until tender, then mash with butter and milk, seasoning with salt.
  5. Serve chicken over mashed potatoes with sauce spooned on top.

Notes

For extra flavor, add fresh herbs or a splash of white wine to the sauce.
