  • 1 pound beef stew meat cut into bite-sized pieces
  • 1 small onion diced
  • 4 cloves garlic minced
  • 10.5 oz cream of mushroom soup
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
For the Pasta and Topping
  • 8 ounces pasta penne or your favorite shape
  • 1 cup grated Parmesan cheese
  • as needed Fresh parsley chopped (optional, for garnish)

Method
 

  1. Combine Ingredients: Place beef, onion, and garlic in the slow cooker.
  2. Mix Sauce: Whisk soup, broth, cream, basil, and oregano. Pour over beef mixture and stir.
  3. Slow Cook: Cover and cook on low for 6-8 hours, or until beef is tender.
  4. Cook Pasta: Cook pasta until al dente, then drain.
  5. Add Pasta and Cheese: Stir pasta, Parmesan, salt, and pepper into the slow cooker.
  6. Finish: Cook for 10-15 minutes to meld flavors.
  7. Serve: Garnish with parsley, if desired, and enjoy hot.

Notes

For a richer flavor, brown the beef before adding it to the slow cooker.
