Ingredients
  

Protein
  • 4 pieces boneless, skinless chicken breasts about 1.5 pounds
Grains
  • 1 cup rice (uncooked)
Broth & Dairy
  • 2 cups chicken broth
  • 1 cup heavy cream can substitute with half-and-half or non-dairy
Vegetables & Aromatics
  • 1 medium onion diced
  • 3 cloves garlic minced
Optional
  • 1 cup frozen peas optional
Oils & Spices
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon parsley for garnish, fresh or dried

Method
 

  1. Cook rice in chicken broth until tender; set aside.
  2. Sauté onion in olive oil until translucent, then add garlic and cook briefly.
  3. Season chicken with spices, cook until golden and cooked through, then remove from skillet.
  4. In the same skillet, add heavy cream and optional peas; simmer briefly.
  5. Return chicken to skillet, simmer to blend flavors, then serve over rice garnished with parsley.

Ensure chicken is cooked to an internal temperature of 165°F for safety.
