  • 8 oz penne pasta
  • 1 lb chicken breast, diced
Vegetables and Dairy
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste Salt and pepper
  • 1/2 cup mozzarella cheese, shredded
Garnish
  • Fresh basil for garnish fresh basil

Method
 

  1. Preheat oven to 375°F (190°C). Cook pasta until al dente, then drain.
  2. Cook diced chicken in olive oil until browned, then add garlic and cook 1 minute.
  3. Add cherry tomatoes and spinach; cook until spinach wilts. Stir in cream, Parmesan, seasoning, salt, and pepper.
  4. Mix pasta with sauce and chicken, transfer to a greased baking dish, top with mozzarella.
  5. Bake 20-25 minutes until bubbly and golden. Garnish with basil before serving.

Notes

For extra flavor, sprinkle with additional Parmesan or fresh herbs before serving.
