Ingredients
  

Dough and Filling
  • 2 1/4 cups whole milk
  • 6 egg yolks egg yolks
  • 1 cup + 2 tbsp granulated white sugar
  • 1/8 tsp salt
  • 1 1/2 tbsp vanilla bean paste
  • 3 1/2 tbsp cornstarch
  • 3 tbsp unsalted butter, cut in cubes
  • 2 1/2 cups all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cup granulated white sugar
  • 1 cup unsalted butter, softened
  • 1 egg egg
  • 1 tbsp vanilla bean paste
  • 1/2 cup granulated white sugar (for rolling the dough in)
  • 1/2 cup granulated white sugar (for the brulee topping)

Method
 

  1. Prepare the cookie dough by mixing dry ingredients and incorporating butter, then chill.
  2. Roll the dough in sugar, cut into shapes, and bake until golden.
  3. Make the creme filling by heating milk and mixing with egg yolks, sugar, vanilla, and cornstarch.
  4. Fill the baked cookies with the creme mixture and chill.
  5. Sprinkle sugar on top and caramelize with a torch for the brûlée effect.

Notes

Chill the dough thoroughly for best results and caramelize sugar just before serving.
