Ingredients
  

Taco Ingredients
  • 1 pound 90/10 ground beef
  • 1/2 medium onion finely chopped
  • 2 tablespoons taco seasoning
  • 2 tablespoons tomato paste
  • 1/4 cup water or beef broth as needed
  • to taste salt as needed
  • 8 (6 inch) taco size flour tortillas
  • 2 to 3 cups mozzarella cheese shredded
  • avocado or vegetable oil
  • fresh cilantro finely chopped, garnish

Method
 

  1. Sauté onions in oil until softened.
  2. Add beef, break it up, and cook until browned.
  3. Mix in tomato paste and taco seasoning. Add water if needed. Cook until beef is cooked through. Season with salt. Cool slightly.
  4. Place tortilla, add cheese, beef filling, and more cheese. Fold and press to seal.
  5. Transfer tacos to a baking sheet and repeat.
  6. Pan fry tacos until golden brown. Transfer to a wire rack.
  7. Garnish with cilantro and serve immediately.

Notes

For extra crispy tacos, use a cast iron skillet.
