Ingredients
  

Protein
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup long-grain white rice
Canned Goods
  • 1 can cream of chicken soup (10.5 oz)
  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 cup chicken broth
Vegetables
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas and carrots (optional)
Garnish
  • Chopped parsley for garnish (optional) parsley

Method
 

  1. Place chicken breasts in the crock pot.
  2. Mix soup, tomatoes, broth, onion, garlic, paprika, salt, and pepper; pour over chicken.
  3. Add rice on top; do not stir. Cover and cook on low 6-8 hours.
  4. In last 30 minutes, add peas and carrots if using.
  5. Shred chicken, stir everything, garnish with parsley, and serve.

Notes

For added flavor, use fresh herbs or spices as desired.
