Ingredients
  

Meat
  • 2 lbs beef stew meat, cubed
Vegetables
  • 4 carrots carrots, sliced
  • 4 potatoes potatoes, diced
  • 1 onion onion, chopped
Broth & Condiments
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • to taste Salt and pepper

Method
 

  1. Add beef, carrots, potatoes, and onion to the crockpot.
  2. Stir in beef broth, tomato paste, thyme, salt, and pepper.
  3. Cook on low for 7-8 hours until the beef is tender.

Notes

For a thicker stew, add a cornstarch slurry during the last 30 minutes of cooking.
