Ingredients
  

  • 1 lb boneless, skinless chicken thighs
  • 3 cups mixed stir-fry vegetables (carrots, bell peppers, snow peas)
  • 1/2 cup soy sauce
  • 1/4 cup hoisin sauce
  • 1 tbsp ginger minced
  • 1 tsp sesame oil
  • 8 oz lo mein noodles cooked

Method
 

  1. Add chicken, soy sauce, hoisin sauce, ginger, and sesame oil to the crockpot. Cook on low for 4 hours.
  2. Shred the chicken, add stir-fry vegetables, and cook for an additional 30 minutes.
  3. Stir in cooked noodles and serve.

Notes

For a spicier kick, add a dash of sriracha or red pepper flakes with the sauces.
