Method
- Cook beef and onion until browned, drain fat.
- Wash and thinly slice potatoes evenly.
- Layer potatoes, beef/onion, and cheese in crockpot, repeating layers.
- Whisk soup, milk, garlic powder, salt, and pepper; pour over layers.
- Cook on low for 6-8 hours, until potatoes are tender.
- Sprinkle remaining cheese on top, cover to melt. Garnish with parsley or chives.
Notes
For a richer flavor, use a blend of cheddar and Monterey Jack cheese.
