Ingredients
  

Meat
  • 1 lb ground beef lean or regular
Vegetables
  • 4 russet or Yukon gold potatoes thinly sliced (about 1/8 inch thick)
  • 1 medium onion chopped
Dairy & Other
  • 2 cups shredded cheddar cheese sharp or mild, divided
  • 10.5 oz cream of mushroom soup
  • 0.5 cup milk
  • 0.5 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley or chopped chives

Method
 

  1. Cook beef and onion until browned, drain fat.
  2. Wash and thinly slice potatoes evenly.
  3. Layer potatoes, beef/onion, and cheese in crockpot, repeating layers.
  4. Whisk soup, milk, garlic powder, salt, and pepper; pour over layers.
  5. Cook on low for 6-8 hours, until potatoes are tender.
  6. Sprinkle remaining cheese on top, cover to melt. Garnish with parsley or chives.

Notes

For a richer flavor, use a blend of cheddar and Monterey Jack cheese.
