Method
- Place chicken thighs in the bottom of a slow cooker.
- Combine tomatoes, olives, sun-dried tomatoes, red onion, garlic, olive oil, vinegar, oregano, basil, salt, and pepper in a bowl.
- Pour the tomato mixture over the chicken thighs.
- Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
- Shred the chicken with two forks directly in the slow cooker.
- Serve immediately, garnished with fresh parsley and feta cheese (if desired). Serve over rice, quinoa, or pasta.
Notes
For a richer flavor, brown the chicken thighs in a skillet before adding them to the slow cooker.
