  • 2 lbs boneless, skinless chicken thighs
  • 14.5 oz canned diced tomatoes undrained
  • 0.5 cup Kalamata olives pitted and halved
  • 0.25 cup sun-dried tomatoes oil-packed, drained and chopped
  • 0.25 cup red onion thinly sliced
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons red grape juice vinegar
  • 1 tablespoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
Garnish
  • 0.25 cup fresh parsley chopped
  • Feta cheese crumbled (optional)

Method
 

  1. Place chicken thighs in the bottom of a slow cooker.
  2. Combine tomatoes, olives, sun-dried tomatoes, red onion, garlic, olive oil, vinegar, oregano, basil, salt, and pepper in a bowl.
  3. Pour the tomato mixture over the chicken thighs.
  4. Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  5. Shred the chicken with two forks directly in the slow cooker.
  6. Serve immediately, garnished with fresh parsley and feta cheese (if desired). Serve over rice, quinoa, or pasta.

Notes

For a richer flavor, brown the chicken thighs in a skillet before adding them to the slow cooker.
