Ingredients
  

Main Ingredients
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 15-ounce can cannellini beans, rinsed and drained
  • 1 15-ounce can great northern beans, rinsed and drained
  • 1 10-ounce can diced tomatoes and green chilies (like Rotel), undrained
  • 1 4-ounce can chopped green chiles, undrained
  • 4 cups chicken broth
  • 0.5 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 0.25 cup Kalamata olives, pitted and chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes (optional)
  • to taste Salt and pepper

Method
 

  1. Place all ingredients in a crockpot.
  2. Season with salt and pepper.
  3. Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked.
  4. Remove chicken and shred. Return to crockpot.
  5. Stir well to combine.
  6. Taste and adjust seasonings.
  7. Serve hot with desired toppings.

Notes

For a creamier chili, stir in a dollop of Greek yogurt or sour cream before serving.
